Recipe - Italian Salad
MethodEither buy or make the dough balls - you can either follow a white bread roll recipe and make small balls rather than rolls - they cook in a few minutes - or you can buy Pizza Express dough balls in some supermarkets. Serve on a plate with soft butter.
Open and strain the mozzarella, cutting into thick slices. Arrange these along one edge of the plate to cover one side. On the other side, arrange slices of vine tomato - full of flavour. If you can't get vine tomatoes, use beef tomatoes instead. Then down the middle of the plate, line slices of cucumber.
Strain and wash the olives and sundried tomatoes, and arrange into the gaps on the plate so that the olives can't run away!
Dress lightly with garlic oil - made the day before you need it from olive oil and finely chopped garlic in a glass jar - and balsamic vinegar to taste. Garnish with basil and serve with Italian red wine!
